Tacos tonight?

In the summer of 2017, our family started to take a closer look at the ingredients in our food. We always tried to be healthy - choosing whole grain breads, not eating sugary cereals or foods, not eating a lot of red meat. What we thought was healthy! But after a health issue in the family, we started looking more closely at the ingredients in our food. One of the ingredients that we found in almost all foods was monosodium glutatmate or MSG. Monosodium glutamate is an additive that the food industry puts in sauces, ketchups, seasonings, processed meats, soups, canned vegetables, breads...just about everything. One of the remarkable things about MSG is that it makes you crave more...actually keeping you from feeling hungry. Have you ever had that "Well, just one more won't hurt" and then you have had 10 or 20 more?  There are other ingredients that make you want to eat more but MSG is ubiquitous in our foods today. 

Having received a PhD in pharmacology with an emphasis in neuropharmacology, I realized the impact that MSG can have in the brain. Glutamate is the major excitatory neurotransmitter in the brain. That means that this compound excites your brain and causes your nerves to fire.  Monosodium glutamate is readily absorbed in to the brain and can act the same as glutamate. This may not be a problem in many individuals but it can signficantly impact those people with migraines, epilepsy, asthma, and even those with heart palpatations. What is alarming is that foods don't have to say that they specifically have MSG. But you can get to know the other names for MSG

As you can see, it is hard see which foods have MSG and we found most do...or potentially have it. So we started a healthier journey and began making all of our seasonings and sauces from scratch - from spices in our kitchen. And you know what, we found that they actually have more flavor and not just taste like salt! Try out our favorite recipe for taco seasoning. It is super easy and you will never think about buying that packaged taco seasoning again! 

As an aside, here are the ingredients of the most widely purchased taco seasoning on the market today.  Chili pepper, salt, maltodextrin, spice, onion powder, corn starch, yellow corn flour. Contains less than 2% of: partially hydrogenated soybean oil, silicon dioxide (anticaking agent), sunflower and/or cottonseed oil, natural flavor, ethoxyquin (preservative). Notice the 2nd ingredient (salt), the third ingredient (also known as msg), and natural flavor (also known as msg). And why do you need partially hydrogenate soybean oil (which causes heart disease), silicon dixoide (a chemical??), ethyoxquin (another chemical).

Homemade Taco Seasoning Recipe

1 tablespoon chili powder
¼ teaspoon garlic powder
¼ onion powder
¼ teaspoon crushed red pepper flakes
¼ teaspoon dried oregano
½ teaspoon paprika
1 & ½ teaspoon ground cumin
1 teaspoon sea salt
1 teaspoon black pepper

  • In a small bowl, mix together all ingredients. Store in airtight container.

For homemade taco meat

1. Brown 1 pound of ground beef in a skillet and drain excess fat.
2. Add in taco seasoning and 2/3 cup of water into ground beef and simmer for at least 5 minutes and serve.
